Indian Lentil Currry

In a saucepan, add red lentils and 2 cups of water. Bring to a boil, then simmer for about 20-25 minutes, until the lentils are soft and mushy.

In a separate pan, heat vegetable oil. Add cumin seeds and let them sizzle.

Add chopped onion and sauté until soft.

Stir in chopped tomato and cook until it softens.

Add turmeric, coriander powder, and salt. Cook for a few minutes, stirring well.

Combine the spice mixture with the cooked lentils. Simmer for an additional 10-15 minutes.

Garnish with fresh coriander leaves.
