Instruction
Heat oil in a pan over medium-high heat.
Add chopped onion and sauté until soft.
Stir in ginger, garlic, and red chili. Cook for a couple of minutes.
Add chicken and cook until no longer pink.
Add Madras curry powder, salt, and chopped tomatoes. Cook until tomatoes soften.
Simmer for 15-20 minutes until the chicken is fully cooked and the sauce thickens.
Garnish with fresh coriander leaves.
